Differences between Essences and Concentrates
Provide flavor and aroma.
The recommended dose is 1% of the total product weight (10mL/kg or L)
Ideal for: gelatin, aguas frescas and beverages, puddings, cheesecakes and cold desserts, low temperature baking and ice cream that need a subtle and balanced touch.
Every 4 oz flavor up to 24kg of final product.
Provide flavor, color and aroma.
Their intensity makes them perfect for recipes that require a bold and consistent taste, with excellent performance in ice cream and frozen desserts, aguas frescas and beverages, shaved ice and coffee syrups and low temperature baking.
Every 4 oz flavor up to 40kg of final product.
How to use them correctly:
In smaller batches, we recommend using a syringe without needle to measure the proper dose according to the total product weight you wish to flavor. For example, to flavor a batch of 12 100mL gelatins (total of 1.2 L of mix), you would use 12mL of Deiman Flavoring Essence.
For frozen desserts, aguas frescas and other applications that use fruit, Deiman flavorings are made to enhance and standarize the flavor, so that even if the fruit is not always the same, your batches are. This does not mean flavorings substitute the fruit, we still recommend you add fruit to these recipes.
